Recipes - Carnivore Diet

Keto Breakfast Casserole (12 servings)

  • 12 eggs
  • 1 ½ lbs sausage
  • ¾ cup bacon crumbles or 12 slices
  • ¾ cup heavy cream
  • 2 cups grated cheese
  • 2 tsp hot sauce

 

  1. Preheat oven to 350°.
  2. Grease a 9 x 13“casserole baking dish.
  3. Crumble and brown sausage. Drain. Warm bacon crumbles with sausage. If using fresh bacon, cook and crumble.
  4. Put prepared meats on bottom of casserole. Sprinkle with 1 cup of the grated cheese.
  5. Add 12 eggs to a blender, add heavy cream, seasonings if desired, and 2 tablespoons of hot sauce. Blend until fluffy. Alternately whisk in a large bowl.
  6. Pour over meats and cheese in casserole dish. Add remaining grated cheese.
  7. Bake for 35 to 40 minutes, or until a knife inserted comes out clean.

 

Carnivore Fat Bread

  • 8 oz cream cheese
  • 3 eggs
  • 5-6 strips cooked bacon 
  • ¾ cup grated mozzarella cheese
  • 1/3 cup parmesan cheese

 

  1. Blend cream cheese with eggs, fine chop the bacon as small as possible.  
  2. Mix bacon into the cream cheese mixture then fold in the mozzarella and parmesan cheese.
  3. Spread out flat on a baking sheet and bake at 200 degrees for 20 minutes.
  4. Cut into squares or use as a carnivore pizza base

 

Carnivore Beef Bread

  • 1 lb ground beef
  • 3 egg whites
  • 5 eggs
  • 2 oz cream cheese
  • ½ tsp of salt
  • 2 oz of butter

 

  1. Preheat oven to 370.
  2. Fully cook ground beef.
  3. Add and blend cooked ground beef, 5 eggs, and cream cheese to strong blender. Blend until liquefied. Add the batter to the mixing bowl, slowly add and whisk in egg whites.
  4. Add this batter to an oven-safe bread bowl. Be sure to add a layer of butter to help prevent the batter from sticking.
  5. Place in oven and bake for 40-50 minutes. Use a toothpick to test if the bread is fully cooked.

 

Cheesy Flatbread

  • 6 oz cheddar cheese, shredded
  • 3 whole eggs
  • ½ tsp garlic (optional)
  • ⅛ tsp baking soda

 

  1. Preheat oven to 375 degrees.
  2. Combine all ingredients and mix thoroughly. (Add 1 tsp garlic if you want garlic breadsticks!)
  3. You can make into one large flatbread or 2 smaller ones.
  4. For 2 smaller ones, spread half the batter onto a half sheet pan lined with parchment paper or a silicone liner.
  5. Do not spread to the edges, let the layer be about ⅓-½ inch thick. It will spread.
  6. Bake for 12 minutes. (12-15 minutes for larger size)
  7. Let cool and cut in half or quarters and use as sandwich bread.
    For breadsticks, slice into strips and grill in a buttered pan.

 

Creamy Cheese Soup

  • 8 oz cream cheese
  • 4 oz cheddar cheese, shredded
  • 1 cup organic chicken broth
  • 1 tsp garlic power
  • ½ tsp salt, or more to taste
  • ¼ tsp black pepper

 

  1. Combine cream cheese and broth in a pot and heat on low (to soften cream cheese; approximately 10 minutes)
  2. After cream cheese has softened, use immersion blender to smooth the soup.
  3. Continue to heat soup on low heat; slowly stirring in seasonings and cheese.
  4. Cook on low until cheese is melted.
  5. Consider adding cooked bacon or diced chicken to the soup.

 

Egg Noodles (1-2 servings)

  • 3 whole eggs
  • ¼ cup water
  • 1 tsp gelatin

 

  1. Blend all ingredients in a blender.
  2. Cook batter in a lightly greased non-stick pan the same way you would cook a crepe. Keep cooking noodle crepes until all batter is used.
  3. Let cool and slice into desired size.
  4. Noodles are good for about 1 week in the fridge or at least 6 months in the freezer in an airtight container or bag.
  5. When reheating, you can either sauté in a pan with butter and seasonings, cook it into your sauce, or boil it for about 1 minute. Recipe can easily be doubled.

 

Cheesy Air Fryer Meatballs

  • 2 lbs ground beef
  • 2 large eggs
  • 2 oz pork rinds
  • 3 oz shredded cheese
  • 1 tsp pink sea salt
  • 1 tbs lard

 

  1. Place all ingredients in a mixing bowl. With clean hands, knead the mixture until thoroughly combined.
  2. Roll into balls approximately 1 ½ inches in diameter. This should make 24 meatballs.
  3. Depending on the size of your air fryer, you’ll cook them in batches.
  4. Line your fryer basket with liners, if you use them. Otherwise, spray with cooking spray.
  5. Place meatballs in the basket, making sure they do not touch each other or the sides of the basket.
  6. Cook at 350 degrees for 8 minutes.
  7. Pull out the basket and turn the meat balls over. Return to fryer and cook at 350 degrees for another 4 minutes.
  8. Meatballs should reach an internal temperature of 165 degrees, and then they’re done!

 

Carnivore Keto Burgers

  • 1 lb ground pork
  • 1 lb ground beef
  • ½ lb bacon
  • Seasonings to taste

 

  1. Dice the bacon as small as possible. You could use a food processor or mincer to get it more finely ground/chopped.
  2. Combine all the ingredients in a large bowl.
  3. Split the mixture into 8 patties and roll each on into a patty shape by hand.
  4. Heat grill/BBQ on high.
  5. Turn grill/BBQ down to low and place patties on grill/BBQ and flatten with a spatula.
  6. Allow to cook on the grill for 5 minutes then flip and cook for a further 5 minutes. This will cook the burgers to well done. 

 

Spicy Chicken Cheesy Muffins

  • 4 oz cooked chicken, shredded or diced small
  • 4 eggs
  • 2 oz shredded cheese
  • ¼ tsp baking soda
  • ½ tsp salt
  • 1 tsp garlic
  • 1 tsp black pepper
  • 1 tsp hot sauce

 

  1. Preheat oven to 350 degrees.
  2. Combine all ingredients in a bowl with a spoon. Or if you want a less chunky muffin, mix in a food processor or in a stand mixer with the paddle attachment.
  3. Divide batter into 8 lined cupcake cups.
  4. Bake for 20-22 minutes or until center is set.

 

Cheeseburger Casserole

  • ½ pound ground beef
  • 6 large eggs
  • 2 oz shredded cheese
  • ½ tsp salt
  • ½ tsp garlic
  • ½ tsp onion powder
  • ¼ tsp hot sauce (optional)
  • ¼ tsp black pepper
  • 1 tsp butter

 

  1. Preheat oven to 325 degrees.
  2. Sauté ground beef in buttered pan with seasonings and sauces until beef is cooked through.
  3. Take beef off stove and let cool for 5-10 minutes.
  4. Pour cooked meat into a 6” silicone pan, or any other 6” greased pan.
  5. Whisk eggs in a bowl and stir in shredded cheese.
  6. Pour egg and cheese mixture over the beef and lightly stir it.
  7. Bake for 40 minutes. Let cool 5-10 minutes and enjoy.

 

Hamburger Helper

  • 1 lb ground beef
  • 2 oz shredded cheese
  • 6 oz cream cheese
  • 1 tsp garlic
  • ½ tsp onion powder
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp butter

 

  1. Begin to sauté the ground beef in a heated pan, crumbling it up.
  2. Stir in the seasonings.
  3. Once the meat is cooked, turn the heat down and stir in the cream cheese.
  4. Let lightly simmer for about 5 minutes.
  5. Turn off the heat and stir in the shredded cheese.
  6. You can also add cut up egg noodles if you want a noodle feel. If you add 2-4 ounces of noodles, you may need about 2 more ounces more of cream cheese.

 

Carnivore Egg Pudding

  • 5soft-boiled eggs peeled
  • 4oz heavy whipping cream
  • 1tbs grass-fed butter, softened
  • 2½tbs erythritol or stevia  
  • 1 tsp vanilla extract
  • 1pinch salt

 

  1. Add all ingredients to the bowl of a blender and blend until smooth. Taste and adjust sweetener, as needed.
  2. Best if chilled in the fridge for 2 hours before serving.

 

Carnivore Custard

  • 3 whole eggs
  • 2 cups heavy cream
  • 1 tbs vanilla extract

 

  1. Preheat the oven to 350°F.
  2. Whisk all ingredients together in a large bowl until completely smooth.
  3. Divide evenly between four ramekins (2 or 3 inches) and place them in an 8×8-inch baking dish.
  4. Bring 2-3 cups of water to a boil in a small saucepan. Create a water bath by pouring boiling water into the baking dish. Continue until the water level is an inch high.
  5. Bake for 30 minutes, check, and continue for 10 more minutes if needed. The top should be golden brown and firm. The under part will be wiggly still.
  6. Remove from the oven. Let cool and set for 10 minutes, before serving warm or refrigerating until chilled. It will firm up as it sits.

 

Vanilla Whipped Cream

  • 8 oz heavy whipping cream
  • 1 tsp vanilla extract, to taste (optional)
  • Pinch of salt (optional)
  • Flavoring IdeasPeppermint, cinnamon, almond, orange, or lemon extract

 

  1. Add heavy whipping cream, vanilla, stevia, optional flavoring and salt to a large mixing bowl or your stand mixer with the whisk attachment.
  2. Whip until thick and somewhat stiff.

 

Smooth and Creamy Cheesecake

  • 12 oz cream cheese, room temp
  • 2 whole eggs, room temp
  • 4 egg yolks, room temp
  • 1 Tbs butter, room temp
  • 1 tsp vanilla
  • ½ tsp almond extract (optional)
  • ½ tsp gelatin
  • Stevia to taste (optional)
  • Pinch of salt

 

  1. Preheat oven to 300 degrees.
  2. Ensure all ingredients are at room temperature.
  3. Combine all ingredients and whisk together with a stand mixer or a hand mixer. 
  4. Place your 6-inch round pan into a larger metal round pan, 8- or 9-inch works.
  5. If you do not have a silicone pan, you can use another 6-inch pan that is well greased or lined with parchment.
  6. Pour ingredients into the 6-inch round silicone baking pan.
  7. Pour boiling water into the outer pan to help the sides of the cheesecake prevent from burning.
  8. Bake for 40 minutes.
  9. Turn oven off and let continue cooking for 20 minutes. 
  10. Chill cheesecake in fridge overnight or at least 6 hours to firm up before slicing.
